Ingredients

  • 1 box (8.5 oz) corn muffin mix
  • 1 cup sour cream
  • 2 cans (15 oz each) whole kernel corn, drained
  • 2 large eggs
  • 1/2 cup butter, melted
  • 1/4 cup sugar
  • 1/2 teaspoon salt
  • 1 can (14.75 oz) creamed corn

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a large bowl, combine the drained whole kernel corn and creamed corn.
  3. Mix in the corn muffin mix until just combined.
  4. In another bowl, beat the eggs, then mix in sour cream, melted butter, sugar, and salt.
  5. Fold the wet mixture into the corn mixture until just combined.
  6. Transfer to the greased baking dish and bake for 45 to 50 minutes.

Notes

Let the corn pudding cool for about 10 minutes before slicing.
