  • 2 whole heads of garlic, peeled
  • 1 onion, chopped
  • 2 sprigs fresh thyme
  • 2 bay leaves
  • 4 egg yolks
  • ½ cup grated Parmesan cheese
  • Salt and pepper, to taste
  • Crusty bread, for serving
  • Fresh parsley, optional for garnish

Instructions

  1. Begin by heating the butter and olive oil in your large pot over medium heat. This will create a perfect base for the soup. Once melted, add the chopped onions. Allow them to sauté for about five minutes until they become translucent and tender, stirring occasionally to prevent any browning.
  2. Next, introduce the peeled garlic cloves to the pot. Stir them in with the sautéed onions and cook for another two to three minutes. The goal is to infuse the oil with the garlic’s enticing aroma without burning it.
  3. Now, pour in your chosen broth, whether chicken or vegetable, and add the thyme and bay leaves. Bring this to a gentle boil, then reduce the heat and let it simmer for about 30 minutes.
  4. Once simmered, carefully remove the fresh herbs. Now is the time to taste your soup; adjust seasoning with salt and pepper according to your preference. Whisk together the egg yolks and grated Parmesan cheese in a separate bowl.
  5. To integrate the egg yolk mixture into the hot soup without scrambling the eggs, you’ll need to temper them. Slowly add a ladle of the hot soup to your egg mixture while whisking continuously. Once tempered, gradually whisk the egg mixture back into the pot.
  6. Allow the soup to simmer for an additional five minutes after adding the egg yolks. Keep stirring gently to ensure it thickens slightly.
