Description

Perfectly seared scallops meet a zesty cilantro lime sauce.


Ingredients

Scale
  • 1 lb sea scallops (dry-packed)
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 2 garlic cloves, minced
  • 2 tbsp fresh lime juice
  • 1 tsp lime zest
  • ¼ cup Greek yogurt (or sour cream)
  • ¼ cup fresh cilantro, chopped
  • 1 tsp honey
  • Salt and pepper, to taste

Instructions

  1. Start by placing your dry-packed scallops on a clean surface and dry them thoroughly with paper towels.
  2. In a blender, combine lime juice, lime zest, minced garlic, Greek yogurt, chopped cilantro, honey and a pinch of salt. Blend until smooth.
  3. Heat olive oil and butter in a skillet over medium-high heat, then sear each scallop for about 2 minutes on each side.
  4. Plate the scallops and drizzle with the zesty sauce, garnish with additional cilantro and lime wedges.

Notes

Scallops should be opaque and just cooked through, around 2 minutes per side.
