Perfectly seared scallops meet a zesty cilantro lime sauce.
Ingredients

- 1 lb sea scallops (dry-packed)
- 2 tbsp olive oil
- 1 tbsp butter
- 2 garlic cloves, minced
- 2 tbsp fresh lime juice
- 1 tsp lime zest
- ¼ cup Greek yogurt (or sour cream)
- ¼ cup fresh cilantro, chopped
- 1 tsp honey
- Salt and pepper, to taste
Instructions
- Start by placing your dry-packed scallops on a clean surface and dry them thoroughly with paper towels.
- In a blender, combine lime juice, lime zest, minced garlic, Greek yogurt, chopped cilantro, honey and a pinch of salt. Blend until smooth.
- Heat olive oil and butter in a skillet over medium-high heat, then sear each scallop for about 2 minutes on each side.
- Plate the scallops and drizzle with the zesty sauce, garnish with additional cilantro and lime wedges.
Notes
Scallops should be opaque and just cooked through, around 2 minutes per side.
