Description

A delightful and nutritious breakfast option that combines the sweetness of strawberries with the creaminess of cottage cheese.


Ingredients

  • ½ cup fresh strawberries, diced
  • 1 cup cottage cheese
  • 2 large eggs
  • 1 tbsp maple syrup or honey (optional)
  • ½ tsp baking powder
  • 1 tsp vanilla extract
  • ½ cup oat flour (or almond flour for gluten-free)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a mini muffin tin.
  2. In a mixing bowl, combine cottage cheese, eggs, vanilla extract, and sweetener. Whisk until smooth.
  3. Add oat flour and baking powder, stirring until just combined.
  4. Fold in diced strawberries.
  5. Spoon the batter into muffin cups, filling each about ¾ full. Bake for 15 to 18 minutes.
  6. Allow to cool for 5 minutes before serving.

Notes

These pancake bites freeze well. Reheat in the microwave or toaster oven for a quick snack.
