- 1 cup cottage cheese
- 2 large eggs
- 1 tbsp maple syrup or honey (optional)
- ½ tsp baking powder
- 1 tsp vanilla extract
- ½ cup oat flour (or almond flour for gluten-free)
Instructions
- Preheat your oven to 350°F (175°C) and grease a mini muffin tin.
- In a mixing bowl, combine cottage cheese, eggs, vanilla extract, and sweetener. Whisk until smooth.
- Add oat flour and baking powder, stirring until just combined.
- Fold in diced strawberries.
- Spoon the batter into muffin cups, filling each about ¾ full. Bake for 15 to 18 minutes.
- Allow to cool for 5 minutes before serving.
