- Begin by spraying your skillet with cooking spray and placing it over medium heat. Crack the eggs into a bowl and whisk them until the yolks and whites are well mixed. Pour the egg mixture into the skillet and allow it to cook for a minute before gently stirring with a spatula. Cook the eggs just until they are set but still soft, allowing for a creamy texture. Once done, take the skillet off the heat and move the scrambled eggs to a separate plate.
- Lay the whole-wheat tortillas flat on a clean surface or a large plate. Start by spreading a generous scoop of cottage cheese in the center of each tortilla—this will add a creamy base. Next, layer on the scrambled eggs, avocado slices, diced tomato, and fresh cilantro. Season everything to taste with salt and pepper for that extra kick of flavor. Be careful not to overfill your tortillas; too much filling can make them difficult to roll.
- To form the burrito, fold in the sides of the tortilla and then tuck the filled edge over the filling, rolling it tightly until you reach the other side. Once rolled, place the burritos seam-side down into the same skillet you used for the eggs, over medium heat. Grill each side for about two minutes, or until the tortillas turn golden and crispy. This not only warms them through but also adds a delightful crunch to your breakfast burrito.
Notes
For a creamier burrito, consider adding cream cheese or Greek yogurt along with the cottage cheese. You can use any tortilla type according to your preference—spinach or corn tortillas also work beautifully.
