- 2 tablespoons ketchup
- 1 tablespoon rice vinegar

- 1–2 tablespoons water, to thin if needed

- In a mixing bowl, combine the soy sauce, honey, grated fresh ginger, minced garlic, sriracha, rice vinegar, and sesame oil. Whisk these ingredients together until you have a consistent marinade. The mixture should showcase a balance of sweetness from the honey and richness from the soy sauce, with enough heat from the sriracha to give your chicken that zesty kick. Once combined, add in your chicken pieces, ensuring they are well-coated. Cover the bowl and let it marinate for a minimum of 20 minutes to let the flavors penetrate the chicken.
- Heat a skillet over medium-high heat. Once the skillet is hot, add the marinated chicken pieces, allowing any excess marinade to drip off for an even cook. Spread the chicken pieces out evenly in the pan. Cook them for about 7 to 8 minutes, stirring occasionally, until the chicken turns golden brown and is cooked through. This step is crucial—the high heat ensures the chicken seals in its juices while developing a delicious crust.
- While the chicken cooks, prepare the Yum Yum sauce by combining mayonnaise, ketchup, rice vinegar, sugar, and smoked paprika in a separate bowl. Mix until smooth and creamy. If the sauce is too thick for your liking, add 1 to 2 tablespoons of water to reach your desired consistency.
