  • 3 lbs flank or skirt steak, thinly sliced and chopped
  • 1 large onion, chopped
  • 2 tbsp vegetable oil
  • 2 fresh limes, juiced (plus extra wedges to serve)
  • 1 tsp salt
  • 1 tsp pepper
  • 4 tbsp butter
  • 1 bunch cilantro, chopped
  • 16 mini corn tortillas

Instructions

  1. Begin by heating the vegetable oil in a large skillet over medium heat. Once the oil is shimmering, add in the sliced flank or skirt steak along with half of the chopped onions. Allow the steak to sear for several minutes, stirring occasionally. You want the meat to develop a nice golden-brown crust while the onions soften and become translucent.
  2. Once the steak is browned, sprinkle in the salt and pepper, followed by the freshly squeezed lime juice. This addition of lime juice not only seasons the meat but also tenderizes it, leading to a more flavorful and juicy result.
  3. In a separate pan, melt the butter over medium heat. As soon as it is melted and bubbly, place the mini corn tortillas in the pan. Fry them for about one minute on each side, or until they are lightly golden and warm.
  4. Once the steak and tortillas are ready, it’s time to assemble your tacos! Start by doubling up the tortillas for stability and fill them generously with the steak mixture. Top each taco with the remaining chopped onions and a sprinkle of fresh cilantro for that signature flavor.
